- 8 small square saltine crackers, crushed
- 1 egg, beaten
- 1 tablespoon of dijon mustard
- 1 tablespoon of mayonnaise
- 1 tablespoon of lemon juice
- 1 pound of crab meat
- Salt, pepper, parsley to taste
- Butter for saute
- Mix all ingredients gently in a large bowl.
- Gently form into tight packed cakes.
- Saute in butter until lightly browned.
